Zaatar Salmon

Ingredients

  • 4 salmon fillets
  • 3 tbsp za'atar seasoning
  • 3 tbsp olive oil
  • 1 lemon
  • 2 garlic cloves
  • 4 cups baby spinach
  • 3/4 tsp salt

How to cook it

  1. Heat the oven to 400F and line a baking sheet.
  2. Pat the salmon dry and set it skin side down on the sheet.
  3. Stir the za'atar with 2 tbsp olive oil and the garlic, then spread it over the salmon and season with salt.
  4. Bake until the salmon flakes easily, about 12 minutes.
  5. Toss the spinach with the remaining olive oil and a squeeze of lemon.
  6. Serve the salmon over the dressed spinach with lemon wedges.
