Beef Kofta Kebabs

Ingredients

  • 2 lb ground beef
  • 1 onion
  • 4 garlic cloves
  • 1/3 cup chopped parsley
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground allspice
  • 1 tbsp olive oil
  • 1.5 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Grate the onion and squeeze out the excess moisture into the sink.
  2. Combine the ground beef with the grated onion, garlic, parsley, cumin, coriander, paprika, allspice, salt, and pepper, kneading until the mixture becomes sticky.
  3. Chill the mixture for 15 minutes so it holds together.
  4. Shape portions around flat metal skewers into long ovals and brush them lightly with olive oil.
  5. Heat a grill or grill pan over medium-high and cook the kebabs, turning, until browned and cooked through, about 10 minutes.
  6. Let rest a few minutes, then slide the kebabs off the skewers to serve.
