Ingredients

  • 2 eggplants
  • 2 cups canned chickpeas
  • 1 onion
  • 4 garlic cloves
  • 28 oz crushed tomatoes
  • 1/4 cup olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 cup chopped parsley
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a large pot over medium and cook the cubed eggplant until softened and browned, about 10 minutes.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Stir in the cumin and smoked paprika until fragrant.
  4. Add the crushed tomatoes, chickpeas, and salt and bring to a simmer.
  5. Cover and cook until the eggplant is meltingly tender and the sauce has thickened, about 25 minutes.
  6. Stir in the parsley and serve.
