Ingredients

  • 2 lb boneless skinless chicken breasts
  • 1/2 cup plain Greek yogurt
  • 3 tbsp olive oil
  • 5 garlic cloves
  • 3 tbsp lemon juice
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 cucumber
  • 1 head romaine lettuce
  • 1 tsp salt

How to cook it

  1. Whisk the yogurt, olive oil, garlic, lemon juice, tomato paste, paprika, cumin, and salt into a marinade.
  2. Cut the chicken into 1.5-inch cubes, coat them in the marinade, and chill at least 20 minutes.
  3. Thread the chicken onto skewers.
  4. Heat a grill or grill pan over medium-high and cook the skewers, turning, until charred and 165F inside, about 12 minutes.
  5. Chop the cucumber and romaine into a simple salad.
  6. Serve the skewers over the salad.
