Falafel Mezze Plate

Ingredients
- 30 oz canned chickpeas
- 1 onion
- 4 garlic cloves
- 1 cup fresh parsley
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 2 cups neutral oil for frying
- 4 pita breads
- 1 cup hummus
- 1/4 cup tahini
- 1 cucumber
- 2 tomatoes
- 2 lemons
- 1 tsp salt
How to cook it
- Pulse the drained chickpeas, onion, garlic, parsley, cumin, coriander, and salt in a food processor into a coarse, sticky paste.
- Pulse in the flour and baking powder, then shape the mixture into 16 small patties.
- Heat the frying oil to 350F and fry the falafel in batches until deep golden and crisp, about 4 minutes, then drain.
- Thin the tahini with the juice of one lemon and a little water into a drizzling sauce.
- Warm the pita and cut into wedges, and dice the cucumber and tomatoes with a squeeze of lemon.
- Build plates with falafel, hummus, the salad, pita, and a drizzle of tahini sauce.
