Ingredients
- 2 lb ground chicken
- 1 onion
- 3 garlic cloves
- 1/3 cup chopped parsley
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 2 tbsp olive oil
- 1 cup plain Greek yogurt
- 2 tbsp lemon juice
- 4 cups baby arugula
- 1 tsp salt
How to cook it
- Grate the onion and squeeze out the excess liquid.
- Mix the ground chicken with the onion, garlic, parsley, cumin, coriander, cinnamon, and salt until combined.
- Shape the mixture into 16 small oblong koftas.
- Heat the olive oil in a skillet over medium-high and cook the koftas, turning, until browned and cooked through, about 12 minutes.
- Stir the yogurt with the lemon juice and a pinch of salt.
- Divide the arugula among four bowls, top with the koftas, and spoon over the yogurt sauce.
