Ingredients

  • 8 bone-in chicken thighs
  • 2 tbsp olive oil
  • 2 onions
  • 4 garlic cloves
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 cup dried apricots
  • 2 cups chicken broth
  • 1/3 cup slivered almonds
  • 1/4 cup chopped cilantro
  • 1 tsp salt

How to cook it

  1. Season the chicken thighs with the salt.
  2. Heat the olive oil in a heavy pot over medium-high and brown the chicken on both sides, about 4 minutes per side, then remove it.
  3. Lower the heat, add the onions, and cook until soft, about 6 minutes, then stir in the garlic, ginger, cinnamon, cumin, and turmeric until fragrant.
  4. Return the chicken, add the broth and apricots, and bring to a simmer.
  5. Cover and cook gently until the chicken is tender and the sauce has thickened, about 40 minutes.
  6. Toast the slivered almonds in a dry pan until golden.
  7. Scatter the almonds and cilantro over the tagine and serve.
