Chicken Shawarma Bowls

Ingredients

  • 2 lb boneless skinless chicken thighs
  • 1/2 cup plain Greek yogurt
  • 3 tbsp olive oil
  • 4 garlic cloves
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 1/2 tsp ground turmeric
  • 3 tbsp lemon juice
  • 1.5 cups basmati rice
  • 1 cucumber
  • 2 tomatoes
  • 1/4 cup tahini
  • 1 tsp salt

How to cook it

  1. Whisk the yogurt, olive oil, garlic, cumin, coriander, paprika, turmeric, half the lemon juice, and salt into a marinade.
  2. Add the chicken thighs, coat them well, and marinate at least 20 minutes.
  3. Cook the basmati rice according to the package directions and keep it warm.
  4. Heat a skillet or grill pan over medium-high and cook the chicken until charred and 165F inside, about 6 minutes per side, then rest and slice.
  5. Stir the tahini with the remaining lemon juice and a splash of water until pourable.
  6. Divide the rice among four bowls and top with sliced chicken, chopped cucumber, and tomatoes.
  7. Drizzle with the tahini sauce and serve.
