- 8 bone-in chicken thighs
- 2 lb Yukon gold potatoes
- 1/3 cup olive oil
- 2 lemons
- 5 garlic cloves
- 1 tbsp dried oregano
- 1 cup chicken broth
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Heat the oven to 425F.
- Cut the potatoes into wedges and spread them in a large roasting pan.
- Whisk the olive oil, the juice of both lemons, garlic, oregano, broth, salt, and pepper, then pour half over the potatoes and toss.
- Nestle the chicken thighs among the potatoes and brush them with the remaining lemon mixture.
- Roast until the potatoes are tender and the chicken reaches 175F, about 50 minutes, basting once.
- Let rest 5 minutes before serving.
