Turkish Red Lentil Soup

Ingredients
- 1.5 cups red lentils
- 1 onion
- 1 carrot
- 3 garlic cloves
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- 6 cups vegetable broth
- 3 tbsp olive oil
- 1 lemon
- 1 tsp salt
How to cook it
- Heat the olive oil in a pot over medium and soften the onion, carrot, and garlic, about 6 minutes.
- Stir in the tomato paste, cumin, and paprika and cook 1 minute.
- Add the rinsed red lentils and broth, bring to a boil, then simmer until the lentils are soft and falling apart, about 25 minutes.
- Blend the soup smooth with an immersion blender and season it with salt.
- Thin with a little water if needed to reach a silky consistency.
- Serve with a squeeze of lemon and a drizzle of olive oil.
