  • 2 red bell peppers
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Heat the oven to 425F and slice the zucchini and bell peppers into bite-size pieces.
  2. Toss the vegetables with the olive oil, minced garlic, oregano, salt, and pepper on a sheet pan.
  3. Spread in a single layer and roast until tender and lightly charred, about 20 minutes.
  4. Serve hot.
