Ingredients

  • 8 bone-in chicken thighs
  • 3 tbsp harissa paste
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 1 lemon
  • 1 tsp ground cumin
  • 2 zucchini
  • 2 red bell pepper
  • 1 red onion
  • 1 tsp salt

How to cook it

  1. Heat the oven to 425F.
  2. Whisk the harissa, olive oil, garlic, cumin, the juice of the lemon, and salt in a large bowl.
  3. Add the chicken thighs and toss to coat them thoroughly.
  4. Scatter the chopped zucchini, bell pepper, and red onion in a roasting pan and nestle the chicken on top, skin side up.
  5. Roast until the vegetables are tender and the chicken reaches 175F, about 35 minutes.
  6. Let rest 5 minutes, then serve the chicken over the roasted vegetables.
