Aloo Gobi

Ingredients

  • 1 head cauliflower
  • 3 russet potatoes
  • 1 onion
  • 2 tomato
  • 4 garlic cloves
  • 1 tbsp grated ginger
  • 1 tsp cumin seeds
  • 3/4 tsp turmeric
  • 1.5 tsp ground coriander
  • 1 tsp garam masala
  • 3 tbsp neutral oil
  • 1/4 cup chopped cilantro
  • 4 cups cooked basmati rice
  • 1 tsp salt

How to cook it

  1. Heat the oil in a large skillet over medium and let the cumin seeds sizzle for 30 seconds.
  2. Add the onion, garlic, and ginger and cook until softened, about 6 minutes.
  3. Stir in the turmeric, coriander, and chopped tomato and cook until the tomato breaks down, about 5 minutes.
  4. Add the diced potatoes and cauliflower florets, season with salt, and toss to coat in the spices.
  5. Cover and cook over medium-low, stirring occasionally, until the vegetables are tender, about 20 minutes.
  6. Stir in the garam masala, finish with cilantro, and serve over the basmati rice.
