Ingredients

  • 4 potatoes
  • 3 tbsp mustard oil
  • 1/2 cup onion, finely chopped
  • 2 green chilies, chopped
  • 2 cloves minced garlic
  • 2 tbsp chopped cilantro
  • 1 tbsp lemon juice
  • 1 tsp salt

How to cook it

  1. Roast the potatoes directly over an open flame or under a broiler, turning occasionally, until the skins char and blister and the inside is soft, about 20 minutes (or boil, then lightly char if no open flame is available).
  2. Let the potatoes cool slightly, then peel off the charred skin and mash the flesh roughly with a fork, leaving some texture.
  3. Add the raw onion, green chilies, garlic, and cilantro to the mashed potato.
  4. Drizzle with mustard oil and lemon juice, add salt, and mix everything together by hand.
  5. Serve at room temperature alongside dal-bhat as the everyday side.
