- 3 potatoes, julienned
- 1/2 tsp turmeric
- 1/2 tsp panch phoron (five-spice blend)
- 2 green chilies, slit
- 3 tbsp mustard oil
- 3/4 tsp salt
How to cook it
- Cut the potatoes into thin matchsticks.
- Heat the mustard oil in a pan and temper with the panch phoron until it crackles.
- Add the potatoes, turmeric, salt, and slit green chilies, and toss well to coat.
- Cook uncovered over medium-low heat, stirring occasionally, until the potatoes are crisp-edged and cooked through, about 15 minutes.
- Serve hot as an everyday side with dal-bhat.
