Ingredients

  • 40 jarred grape leaves
  • 1.5 cups rice
  • 1 onion
  • 1/2 cup olive oil
  • 1/3 cup pine nuts
  • 1/4 cup chopped dill
  • 1/4 cup chopped mint
  • 2 lemons
  • 1 tsp salt

How to cook it

  1. Rinse the grape leaves and pat them dry, trimming any tough stems.
  2. Cook the onion in 3 tbsp olive oil until soft, then stir in the rice, pine nuts, dill, mint, salt, and the juice of one lemon and cook 2 minutes.
  3. Place a spoonful of filling on each leaf, fold in the sides, and roll it into a tight cylinder.
  4. Pack the rolls seam side down in a heavy pot, drizzle with the remaining olive oil and lemon juice, and add water to just cover.
  5. Weight the rolls with a plate, cover, and simmer gently until the rice is tender, about 45 minutes.
  6. Let cool slightly and serve warm or at room temperature with lemon wedges.
