Mujadara

Ingredients
- 1.5 cups brown lentils
- 1 cup basmati rice
- 3 onions
- 1/3 cup olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 4 cups vegetable broth
- 1.5 tsp salt
How to cook it
- Heat the olive oil in a deep pot over medium and cook the thinly sliced onions, stirring often, until deep brown and crisp, about 20 minutes, then remove half for topping.
- Add the cumin, coriander, and cinnamon to the pot and toast for 30 seconds.
- Stir in the lentils and broth, bring to a boil, then simmer 15 minutes.
- Add the rice and salt, cover, and cook until the rice and lentils are tender and the liquid is absorbed, about 20 minutes.
- Fluff gently and let it rest 5 minutes.
- Serve topped with the reserved crispy onions.
