Mujadara

Mujadara is Mediterranean home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 1.5 cups brown lentils
  • 1 cup basmati rice
  • 3 onions
  • 1/3 cup olive oil
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 4 cups vegetable broth
  • 1.5 tsp salt

How to cook it

  1. Heat the olive oil in a deep pot over medium and cook the thinly sliced onions, stirring often, until deep brown and crisp, about 20 minutes, then remove half for topping.
  2. Add the cumin, coriander, and cinnamon to the pot and toast for 30 seconds.
  3. Stir in the lentils and broth, bring to a boil, then simmer 15 minutes.
  4. Add the rice and salt, cover, and cook until the rice and lentils are tender and the liquid is absorbed, about 20 minutes.
  5. Fluff gently and let it rest 5 minutes.
  6. Serve topped with the reserved crispy onions.

When to cook it

Mujadara takes about 55 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
