Ingredients
- 2 chicken breasts
- 3 cups cooked brown rice
- 15 oz canned black beans
- 1 cup corn kernels
- 1 cup cherry tomatoes
- 1 avocado
- 3/4 cup shredded cheddar
- 2 cups romaine lettuce
- 2 limes
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 tbsp olive oil
- 1/2 tsp salt
How to cook it
- Rub the chicken with the olive oil, cumin, chili powder, and salt.
- Sear in a hot skillet over medium-high until 165F inside, about 6 minutes per side, then rest and slice.
- Warm the brown rice and the drained black beans with the corn.
- Divide the rice among four bowls and arrange the beans, corn, tomatoes, romaine, and avocado on top.
- Add the sliced chicken and cheddar, then squeeze lime over each bowl and serve.
