Black Bean Quesadilla

Ingredients
- 4 large flour tortillas
- 15 oz canned black beans
- 2 cups shredded Monterey Jack
- 1/2 cup salsa
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 tbsp neutral oil
- 1/2 cup sour cream
How to cook it
- Mash the black beans lightly with the cumin and chili powder.
- Spread the bean mixture over half of each tortilla, top with cheese, and fold over.
- Heat the oil in a skillet over medium and cook each quesadilla until golden and the cheese melts, about 3 minutes per side.
- Cut into wedges and serve with salsa and sour cream.
