Ingredients
- 1.5 lb sirloin steak
- 2 cups long-grain rice
- 15 oz canned black beans
- 1.5 cups corn kernels
- 2 limes
- 1/2 cup chopped cilantro
- 2 cups romaine lettuce
- 1 cup cherry tomatoes
- 1 avocado
- 1 tbsp chili powder
- 1 tsp ground cumin
- 2 tbsp olive oil
- 1 tsp salt
How to cook it
- Cook the rice, then fold in the juice of one lime and half the cilantro for cilantro-lime rice.
- Rub the steak with the chili powder, cumin, and salt.
- Heat the olive oil in a skillet over high heat and sear the steak to medium, about 4 minutes per side, then rest and slice thinly.
- Warm the black beans and corn together in a small pot.
- Divide the rice among four bowls and top with beans, corn, romaine, halved tomatoes, and sliced avocado.
- Add the sliced steak and finish with remaining cilantro and lime wedges.
