Chicken Quesadilla

Ingredients

  • 4 large flour tortillas
  • 2 cooked chicken breasts
  • 2 cups shredded cheddar and Monterey Jack
  • 1 bell pepper
  • 1/2 onion
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tbsp neutral oil
  • 1/2 cup salsa
  • 1/2 cup sour cream

How to cook it

  1. Heat 1 tbsp oil in a skillet and soften the bell pepper and onion with the cumin and chili powder, about 5 minutes.
  2. Toss the shredded chicken with the peppers to warm through.
  3. Lay a tortilla in the skillet, cover half with cheese, chicken, and peppers, fold over, and cook until golden, about 3 minutes per side.
  4. Repeat with the remaining tortillas and serve with salsa and sour cream.
