  • 4 cups cooked shredded chicken
  • 10 corn tortillas
  • 1 10.5 oz can condensed cream of chicken soup
  • 1 10.5 oz can condensed cream of mushroom soup
  • 10 oz diced tomatoes with green chiles
  • 1 onion
  • 1 green bell pepper
  • 3 garlic cloves
  • 1/2 cup chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 cups shredded cheddar
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the oven to 350F and grease a 9-by-13-inch baking dish.
  2. Warm the olive oil in a skillet and cook the onion, bell pepper, and garlic until soft, about 6 minutes.
  3. Stir in both condensed soups, the diced tomatoes with green chiles, broth, cumin, chili powder, salt, and pepper, then fold in the shredded chicken.
  4. Tear the tortillas into strips and layer a third of them in the dish, followed by a third of the chicken mixture and a handful of cheddar.
  5. Repeat the layers twice, finishing with a generous topping of cheddar.
  6. Bake until bubbling and golden, about 35 minutes, then rest 10 minutes before serving.
