Ingredients
- 4 large flour tortillas
- 6 large eggs
- 6 slices bacon
- 1.5 cups shredded cheddar
- 1 bell pepper
- 1/2 cup salsa
- 1 tbsp neutral oil
- 1/2 tsp salt
How to cook it
- Cook the bacon in a skillet over medium heat until crisp, then drain and crumble it.
- Pour off most of the fat, add the diced bell pepper, and soften for 3 minutes.
- Beat the eggs with the salt, pour into the pan, and scramble softly until just set, about 2 minutes.
- Lay a tortilla in a clean skillet over medium heat, scatter cheddar, egg, bacon, and peppers over half, then fold and press.
- Cook until golden and the cheese melts, about 2 minutes per side, then repeat with the remaining tortillas.
- Cut into wedges and serve with salsa.
