Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 2 cups long-grain rice
  • 15 oz canned black beans
  • 1.5 cups corn kernels
  • 2 limes
  • 1/2 cup chopped cilantro
  • 2 cups romaine lettuce
  • 1 cup pico de gallo
  • 1 avocado
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Cook the rice and fold in the juice of one lime and half the cilantro.
  2. Toss the chicken with the chili powder, cumin, and salt.
  3. Heat the olive oil in a skillet over medium-high and cook the chicken until browned and 165F inside, about 6 minutes per side, then slice.
  4. Warm the black beans and corn together in a small pot.
  5. Divide the rice among four bowls and top with beans, corn, romaine, and pico de gallo.
  6. Add the sliced chicken and sliced avocado, then finish with lime wedges and remaining cilantro.
