Carne Asada Fries

Carne Asada Fries is Tex Mex home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

50 min Medium

Ingredients

  • 2 lb frozen french fries
  • 1.5 lb flank steak
  • 2 cups shredded Monterey Jack
  • 1/2 cup sour cream
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 2 limes
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Bake the french fries according to the package until deeply golden and crisp.
  2. Rub the steak with the chili powder, cumin, and salt.
  3. Heat the olive oil in a skillet over high heat and sear the steak to medium, about 4 minutes per side, then rest and dice small.
  4. Spread the hot fries on a platter and scatter with the Monterey Jack, letting the heat melt it.
  5. Pile the diced steak over the cheesy fries.
  6. Finish with sour cream, guacamole, pico de gallo, and a squeeze of lime.

Carne Asada Fries takes about 50 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
