Ingredients

  • 4 large flour tortillas
  • 16 oz canned refried beans
  • 1.5 cups shredded cheddar
  • 2 cups cooked rice
  • 1/2 cup salsa
  • 1 tsp ground cumin
  • 1/2 cup sour cream
  • 1 tbsp neutral oil
  • 1/2 tsp salt

How to cook it

  1. Warm the refried beans in a pot with the cumin and salt until spreadable.
  2. Warm the flour tortillas so they fold without cracking.
  3. Spread beans down the center of each tortilla and top with rice, cheddar, and salsa.
  4. Fold in the sides and roll each into a tight burrito.
  5. Sear the burritos seam-side down in the oiled skillet until golden and the cheese melts, about 2 minutes per side.
  6. Serve warm with sour cream.
