Ingredients
- 4 large flour tortillas
- 1/2 lb breakfast sausage
- 6 large eggs
- 2 cups frozen diced hash browns
- 1 cup shredded cheddar
- 1/2 cup salsa
- 1 tbsp neutral oil
- 1/2 tsp salt
How to cook it
- Brown the sausage in a skillet, breaking it up, about 6 minutes, then remove.
- Add the oil and hash browns to the same skillet and cook until crisp, about 8 minutes.
- Beat the eggs with the salt, pour into the pan, and scramble softly until just set, about 2 minutes.
- Warm the tortillas, then divide the sausage, hash browns, eggs, cheddar, and salsa among them.
- Fold in the sides and roll up tightly to serve.
