Beef Enchiladas

Ingredients
- 1.5 lb ground beef
- 12 corn tortillas
- 3 cups red enchilada sauce
- 2 cups shredded cheddar
- 1 onion
- 3 garlic cloves
- 1 tsp ground cumin
- 1 tbsp chili powder
- 1/2 cup sour cream
- 2 tbsp olive oil
- 1 tsp salt
How to cook it
- Heat the oven to 375F and spread a thin layer of enchilada sauce in a baking dish.
- Heat the olive oil in a skillet and brown the ground beef with the onion, garlic, cumin, chili powder, and salt, about 8 minutes.
- Warm the corn tortillas briefly so they roll without cracking.
- Fill each tortilla with beef and a little cheese, roll up, and set seam-side down in the dish.
- Pour the remaining sauce over the top and scatter with the rest of the cheese.
- Bake until bubbling and the cheese is melted, about 20 minutes, then serve with sour cream.
