Roasted Vegetable Couscous

Ingredients
- 1.5 cups whole-wheat couscous
- 2 zucchini
- 2 red bell pepper
- 1 red onion
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 3 garlic cloves
- 1 tsp ground cumin
- 1/3 cup chopped parsley
- 1 lemon
- 1 tsp salt
How to cook it
- Heat the oven to 425F.
- Toss the chopped zucchini, bell pepper, red onion, and cherry tomatoes with 3 tbsp olive oil, the garlic, cumin, and salt.
- Spread them on a baking sheet and roast until tender and caramelized, about 25 minutes.
- Meanwhile bring 2 cups of water to a boil, stir in the couscous, cover, and remove from the heat for 5 minutes, then fluff it with a fork.
- Fold the roasted vegetables into the couscous with the remaining olive oil and lemon juice.
- Stir in the parsley and serve warm.
