Ingredients

  • 1.5 cups quinoa
  • 15 oz canned chickpeas
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 1/2 cup kalamata olives
  • 2 cups baby spinach
  • 3 tbsp tahini
  • 2 lemons
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 1 tsp dried oregano
  • 1/2 tsp salt

How to cook it

  1. Rinse the quinoa, then simmer in 3 cups water until tender and the germ uncoils, about 15 minutes; drain and cool slightly.
  2. Whisk the tahini, juice of the lemons, minced garlic, half the olive oil, and a splash of water into a pourable dressing.
  3. Toss the drained chickpeas, cucumber, tomatoes, red onion, and olives with the remaining olive oil, oregano, and salt.
  4. Fold the spinach and quinoa into the vegetables.
  5. Divide among bowls and drizzle generously with the tahini dressing.
