Moroccan Vegetable Tagine

Ingredients
- 2 cups canned chickpeas
- 3 carrots
- 1 sweet potato
- 2 zucchini
- 1 onion
- 4 garlic cloves
- 15 oz crushed tomatoes
- 2 cups vegetable broth
- 3 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1 tsp ground coriander
- 1/4 cup chopped cilantro
- 1 tsp salt
How to cook it
- Heat the olive oil in a large pot over medium and soften the onion and garlic, about 5 minutes.
- Stir in the cumin, ginger, cinnamon, and coriander until fragrant.
- Add the carrots, sweet potato, crushed tomatoes, chickpeas, broth, and salt.
- Bring to a simmer, cover, and cook 15 minutes.
- Add the zucchini and cook until all the vegetables are tender, about 15 minutes more.
- Stir in the cilantro and serve.
