Freekeh Veggie Bowl

Ingredients
- 1.5 cups freekeh
- 1.5 cups canned chickpeas
- 1 head cauliflower
- 1 red onion
- 1/4 cup olive oil
- 1 tsp ground cumin
- 3 cups vegetable broth
- 1/4 cup tahini
- 1 lemon
- 1/3 cup chopped parsley
- 1 tsp salt
How to cook it
- Heat the oven to 425F.
- Toss the cauliflower florets, chickpeas, and red onion with 3 tbsp olive oil, the cumin, and half the salt, then roast until browned, about 25 minutes.
- Meanwhile rinse the freekeh and simmer it in the broth until tender and the liquid is absorbed, about 25 minutes.
- Whisk the tahini with the lemon juice, remaining salt, and enough water to make a pourable sauce.
- Fold the roasted vegetables into the freekeh.
- Divide among bowls, drizzle with the tahini sauce, and scatter with parsley.
