Linguine with Clams

Ingredients
- 1 lb linguine
- 3 lb littleneck clams
- 6 garlic cloves
- 1/3 cup olive oil
- 1 cup seafood broth
- 1/2 tsp red pepper flakes
- 1/2 cup chopped parsley
- 1 lemon
- 1/2 tsp salt
How to cook it
- Scrub the clams under cold water and discard any that stay open when tapped.
- Bring a large pot of salted water to a boil and cook the linguine until just short of al dente.
- Meanwhile heat the olive oil in a wide skillet over medium and cook the sliced garlic and red pepper flakes until fragrant, about 1 minute.
- Add the seafood broth and clams, cover, and steam until the shells open, about 6 minutes, discarding any that stay shut.
- Reserve a cup of pasta water, then drain the linguine and add it to the skillet.
- Toss with a splash of pasta water, the parsley, and a squeeze of lemon until the sauce clings.
- Serve at once in warm bowls.
