Ingredients

  • 1 lb spaghetti
  • 8 garlic cloves
  • 1/2 cup olive oil
  • 1 tsp red pepper flakes
  • 1/2 cup chopped parsley
  • 1/2 cup grated parmesan
  • 1 tsp salt

How to cook it

  1. Cook the spaghetti in well-salted boiling water until al dente, about 10 minutes; reserve 1 cup pasta water before draining.
  2. Meanwhile warm the olive oil in a skillet over medium-low and cook the sliced garlic until pale gold, about 3 minutes.
  3. Add the red pepper flakes and cook 30 seconds.
  4. Add the drained pasta and a splash of pasta water, tossing until glossy.
  5. Off the heat, toss with the parsley and parmesan and serve.
