Ingredients

  • 8 bone-in chicken thighs
  • 28 oz crushed tomatoes
  • 2 bell peppers
  • 8 oz cremini mushrooms
  • 1 onion
  • 4 garlic cloves
  • 1 cup chicken broth
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tbsp fresh rosemary
  • 1 bay leaf
  • 1 tsp salt

How to cook it

  1. Pat the chicken thighs dry and season them with salt.
  2. Heat the olive oil in a large skillet over medium-high and brown the thighs skin-side down until golden, about 5 minutes per side, then remove.
  3. Add the sliced peppers, mushrooms, and onion and cook until softened, about 8 minutes.
  4. Stir in the garlic, oregano, and rosemary for 1 minute.
  5. Pour in the crushed tomatoes and chicken broth, add the bay leaf, and nestle the chicken back in.
  6. Cover and simmer until the chicken is tender and cooked through, about 35 minutes.
  7. Discard the bay leaf and serve the braise hot.
