Chicken Florentine

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/3 cup all-purpose flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 garlic cloves
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 5 cups baby spinach
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • 1/2 tsp salt

How to cook it

  1. Halve the chicken breasts horizontally, pound them to an even thickness, season with salt, and dredge in flour.
  2. Heat the olive oil and butter in a skillet over medium-high and cook the chicken until golden and cooked through, about 4 minutes per side, then set aside.
  3. Add the garlic to the pan and cook until fragrant, 30 seconds.
  4. Pour in the chicken broth and cream and simmer until slightly thickened, about 4 minutes.
  5. Stir in the parmesan and lemon juice, then add the spinach and cook until wilted.
  6. Return the chicken to the sauce, spoon it over, and serve.
