Butternut Squash Risotto

Ingredients
- 2 cups arborio rice
- 3 cups butternut squash
- 6 cups vegetable broth
- 1 onion
- 3 garlic cloves
- 3 tbsp butter
- 3/4 cup grated parmesan
- 2 tbsp olive oil
- 1 tbsp fresh sage
- 1/2 tsp salt
How to cook it
- Warm the vegetable broth in a saucepan and keep it at a bare simmer.
- Heat the olive oil in a wide pot and cook the diced butternut squash until it begins to soften, about 6 minutes, then add the onion and garlic and cook 4 minutes more.
- Add the rice and stir until the edges turn translucent.
- Add the warm broth a ladle at a time, stirring until each addition is absorbed, until the rice and squash are creamy and tender, about 22 minutes.
- Stir in the butter, parmesan, and chopped sage.
- Season with salt and serve.
