- 4 ribeye steaks
- 2 lb baby potatoes
- 4 tbsp butter
- 5 garlic cloves
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 3 tbsp olive oil
- 1.5 tsp salt
- 1 tsp black pepper
How to cook it
- Heat the oven to 425F, halve the baby potatoes, and toss them with the olive oil, half the salt, and half the pepper on a sheet pan.
- Roast the potatoes until crisp and tender, about 30 minutes, turning once.
- Pat the steaks dry and season both sides generously with the remaining salt and pepper.
- Sear the steaks in a dry cast-iron skillet over high heat until well browned, about 3 minutes per side.
- Add the butter, smashed garlic, rosemary, and thyme, and spoon the foaming butter over the steaks for 1 minute.
- Rest the steaks 5 minutes, then serve with the roasted potatoes and pan butter.
- Spoon any remaining garlic butter over the potatoes before serving.
