Ingredients

  • 1 lb spaghetti
  • 1.5 cups grated pecorino romano
  • 1/2 cup grated parmesan
  • 1 tbsp black pepper
  • 1/2 tsp salt

How to cook it

  1. Bring a pot of salted water to a boil and cook the spaghetti until al dente, using less water than usual so it turns starchy.
  2. Toast the coarsely ground black pepper in a dry skillet over medium heat until fragrant, about 1 minute.
  3. Ladle a cup of the starchy pasta water into the skillet and let it cool slightly.
  4. Whisk the pecorino and parmesan into the warm water off the heat to make a smooth paste.
  5. Drain the spaghetti, reserving more water, and add it to the cheese sauce.
  6. Toss vigorously over low heat, adding pasta water until the sauce is glossy and clings, then serve.
