Chicken Marsala

Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 12 oz cremini mushrooms
- 3 tbsp butter
- 2 tbsp olive oil
- 1 cup mushroom broth
- 1/2 cup red grape juice
- 1 tbsp balsamic vinegar
- 2 garlic cloves
- 2 tbsp chopped parsley
- 1/2 tsp salt
How to cook it
- Halve the chicken breasts horizontally, pound them thin, season with salt, and dredge in flour.
- Heat the olive oil and 1 tbsp butter in a skillet over medium-high and brown the cutlets, about 3 minutes per side, then set aside.
- Add the sliced mushrooms and cook until browned and their liquid evaporates, about 6 minutes.
- Add the garlic for 30 seconds, then pour in the mushroom broth, grape juice, and balsamic vinegar to build an alcohol-free marsala-style sauce.
- Simmer until the sauce reduces and thickens slightly, about 8 minutes, then stir in the remaining butter.
- Return the chicken with any juices, spoon the sauce over, and finish with parsley.
