Shrimp Scampi

Ingredients
- 1 lb linguine
- 1.5 lb large shrimp
- 6 garlic cloves
- 4 tbsp butter
- 3 tbsp olive oil
- 1/2 cup dry white wine
- 1 lemon
- 1/2 tsp red pepper flakes
- 1/4 cup chopped parsley
- 1/4 cup grated parmesan
- 1/2 tsp salt
How to cook it
- Cook the linguine in salted water until al dente, about 10 minutes; reserve 1/2 cup pasta water, then drain.
- Melt 2 tbsp butter with the olive oil in a large skillet over medium heat and cook the garlic and red pepper flakes 1 minute.
- Add the shrimp and cook until pink, about 3 minutes, then remove.
- Pour in the wine and lemon juice and simmer 2 minutes, then whisk in the remaining butter.
- Return the shrimp, add the pasta and a splash of pasta water, and toss to coat.
- Finish with parsley and parmesan and serve.
