Shrimp Scampi

Ingredients

  • 1 lb linguine
  • 1.5 lb large shrimp
  • 6 garlic cloves
  • 4 tbsp butter
  • 3 tbsp olive oil
  • 1/2 cup dry white wine
  • 1 lemon
  • 1/2 tsp red pepper flakes
  • 1/4 cup chopped parsley
  • 1/4 cup grated parmesan
  • 1/2 tsp salt

How to cook it

  1. Cook the linguine in salted water until al dente, about 10 minutes; reserve 1/2 cup pasta water, then drain.
  2. Melt 2 tbsp butter with the olive oil in a large skillet over medium heat and cook the garlic and red pepper flakes 1 minute.
  3. Add the shrimp and cook until pink, about 3 minutes, then remove.
  4. Pour in the wine and lemon juice and simmer 2 minutes, then whisk in the remaining butter.
  5. Return the shrimp, add the pasta and a splash of pasta water, and toss to coat.
  6. Finish with parsley and parmesan and serve.
