Vegetable Thukpa (Noodle Soup)

Ingredients
- 8 oz wheat noodles
- 1 cup cabbage, shredded
- 1 carrot, julienned
- 1 onion
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tbsp neutral oil
- 4 cups vegetable broth
- 1 tsp salt
How to cook it
- Boil the noodles in salted water until just tender, then drain and set aside.
- Heat the oil in a large pot and cook the sliced onion, ginger, and garlic until fragrant, about 3 minutes.
- Add the cabbage and carrot and stir-fry briefly for a couple of minutes.
- Pour in the vegetable broth and salt and bring to a simmer, cooking until the vegetables are tender, about 8 minutes.
- Add the cooked noodles to the pot and simmer together for 2 minutes so they take on the broth's flavor.
- Ladle hot into bowls; this simple one-bowl soup is everyday hill-family food, not a restaurant dish.
