Hah Manxo (Assamese Duck Curry)

Ingredients
- 2 lb duck, bone-in pieces
- 3 tbsp mustard oil
- 2 onion
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 cup ash gourd
- 1/2 tsp turmeric
- 3 green chili
- 3 cups water
- 1.5 tsp salt
How to cook it
- Heat the mustard oil in a heavy pot and fry the sliced onions until deep golden, about 10 minutes.
- Stir in the ginger and garlic paste and cook a minute, then add the duck pieces and turmeric.
- Brown the duck well on all sides over medium-high heat, about 10 minutes, letting some of its fat render out.
- Pour in the water, add the slit green chilies and salt, bring to a simmer, then cover and cook low and slow until the duck is fork-tender, about 45 minutes.
- Add the cubed ash gourd for the last 15 minutes so it soaks up the gravy without falling apart.
- Skim any extra fat from the top and serve hot with rice; this is weekend or occasion food, not a weeknight dish.
