Baja Fish Tacos
Baja Fish Tacos is Mexican home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 lb cod or tilapia fillets
- 12 corn tortillas
- 4 cups shredded cabbage
- 1/2 cup sour cream
- 2 limes
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 avocado
- 1/4 cup chopped cilantro
- 3 tbsp neutral oil
- 1/2 tsp salt
How to cook it
- Whisk the sour cream with the juice of one lime and a pinch of salt for the crema.
- Toss the cabbage with the juice of the second lime.
- Season the fish with the cumin, chili powder, paprika, and salt.
- Heat the oil in a skillet over medium-high and cook the fish until it flakes, about 3 minutes per side, then break into chunks.
- Warm the corn tortillas and fill with fish, cabbage, avocado, and cilantro.
- Drizzle with the lime crema and serve.

Baja Fish Tacos takes about 35 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
