Assamese Chicken Curry

Ingredients

  • 2 lb chicken, bone-in pieces
  • 2 tbsp mustard oil
  • 1 onion
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1/2 tsp turmeric
  • 2 green chili
  • 2 cups water
  • 1 tsp salt

How to cook it

  1. Heat the mustard oil in a pot and fry the sliced onion until soft and lightly golden, about 6 minutes.
  2. Stir in the ginger and garlic paste and cook for a minute until the raw smell fades.
  3. Add the chicken pieces and turmeric and cook, turning often, until the chicken is lightly browned all over.
  4. Pour in the water, add the slit green chilies and salt, and bring to a simmer.
  5. Cover and cook over medium-low heat until the chicken is fully tender, about 25 minutes, keeping the gravy thin.
  6. Serve hot with rice; this stays ginger-forward and light rather than heavy with masala.
