Ingredients

  • 4 potatoes
  • 1 tbsp mustard oil
  • 1 red onion
  • 1 green chili
  • 2 tbsp chopped cilantro
  • 1/2 tsp salt

How to cook it

  1. Boil the potatoes whole in salted water until a knife slides through easily, about 15 minutes.
  2. Drain, cool just enough to handle, then peel and mash with your hands or a fork, leaving it a little rough rather than smooth.
  3. Finely chop the onion, chili, and cilantro and mix them straight into the warm potato.
  4. Drizzle in the mustard oil and salt and mix well with your fingers so the raw oil coats everything.
  5. Taste and adjust salt, then serve at room temperature alongside rice and dal.
