Machor Jhol (Mild Everyday Fish Curry)

Ingredients
- 1.5 lb fish steaks (rohu or similar)
- 2 tbsp mustard oil
- 1 potato
- 1/2 tsp turmeric
- 1/2 tsp cumin seeds
- 2 green chili
- 1 tsp ginger paste
- 2 cups water
- 1 tsp salt
How to cook it
- Rub the fish with a little turmeric and salt and let it sit for 10 minutes.
- Heat the mustard oil in a pan and shallow fry the fish pieces briefly, then set them aside.
- In the same oil, let the cumin seeds sizzle, then add the ginger paste and cut potato and stir for a minute.
- Add the remaining turmeric, water, slit green chilies, and salt, and simmer until the potato is nearly tender, about 12 minutes.
- Slide the fish back into the thin broth and simmer gently until just cooked through, about 8 minutes.
- Serve hot with plain rice; this is the plainer, everyday counterpart to the sour tenga.
