Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup water
  • 2 cups cabbage, finely chopped
  • 1 carrot, grated
  • 1 onion, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tbsp neutral oil
  • 3/4 tsp salt

How to cook it

  1. Knead the flour with the water and a pinch of salt into a smooth, firm dough, then cover and rest it for 20 minutes.
  2. Meanwhile, mix the chopped cabbage, carrot, onion, ginger, garlic, oil, and salt together in a bowl for the filling, squeezing out any extra water from the vegetables.
  3. Roll the dough into a long log and cut it into small pieces, then roll each piece into a thin round.
  4. Place a spoonful of filling in the center of each round and pleat the edges closed into a small pouch or half-moon shape.
  5. Arrange the dumplings in a greased steamer basket without touching and steam over boiling water until the wrappers turn glossy and slightly translucent, about 12 minutes.
  6. Serve hot, traditionally with a spicy tomato-chili dip on the side.
