Jadoh (Rice Cooked with Pork)

Ingredients

  • 2 cups rice
  • 1 lb pork, bone-in pieces
  • 1 tbsp mustard oil
  • 1 tbsp ginger, sliced
  • 3 garlic cloves
  • 1/2 tsp turmeric
  • 1 bay leaf
  • 3.5 cups water
  • 1 tsp salt

How to cook it

  1. Rinse the rice and set aside.
  2. Heat the mustard oil in a heavy pot and cook the pork with the ginger, garlic, turmeric, and bay leaf until the pork is lightly browned, about 8 minutes.
  3. Add the water and salt, bring to a boil, then cover and simmer until the pork is nearly tender, about 20 minutes.
  4. Stir in the rinsed rice, cover, and cook over low heat until the rice is fully cooked and has absorbed the pork broth, about 20 minutes, stirring gently partway through.
  5. Let it rest covered for 5 minutes off the heat before fluffing and serving hot.
  6. This one-pot dish is a full meal on its own, no side dishes needed.
