Vietnamese Shaking Beef

Ingredients

  • 1.75 lb beef sirloin
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 5 garlic cloves
  • 1 red onion
  • 4 cups watercress
  • 1 lime
  • 3 tbsp neutral oil
  • 4 cups cooked jasmine rice

How to cook it

  1. Cut the beef into large cubes and marinate with the soy sauce, oyster sauce, fish sauce, sugar, and garlic for 15 minutes.
  2. Heat the oil in a wok or cast-iron skillet until nearly smoking.
  3. Add the beef in a single layer and sear hard, shaking the pan to turn the cubes, until browned but still pink inside, about 4 minutes.
  4. Toss in the red onion wedges and stir-fry 1 minute more.
  5. Pile the beef over a bed of watercress so the greens wilt slightly, and squeeze lime over the top.
  6. Serve with the jasmine rice.
